My Story: The Butcher Shop & The Kitchen
I grew up in a busy, small-town community nestled in the heart of Texas, where every Friday night revolved around the grill. My real education, however, started in my father’s specialized butcher shop.
I didn’t just watch; I learned the anatomy of every cut. By age 14, I was hands-on, assisting with primal butchery and understanding how aging and marbling affect texture and flavor. My father wasn’t just selling cuts; he was teaching respect for the animal and the importance of zero-waste cooking.
After those invaluable years, I took my passion to a professional level, formally training at the renowned Culinary Institute of America (CIA). This professional journey taught me to blend my family’s old-world, nose-to-tail wisdom with modern, precise cooking techniques and strict food safety standards.
Fresh Meat Recipes is my bridge: it connects the deep, hands-on knowledge of the butcher block with the efficiency and flavor innovation of a modern professional kitchen.
